I’ve been a bit quiet on my blog lately but that’s because I have been non-stop since about November, just after I relaunched my blog! This Baking Backpacker has been doing lots of baking and even more backpacking!

With a double birthday celebration in January what better way to spend it, and wash away any post-Christmas blues by jetting off to Central America!! It was a first for me so I crammed Mexico, Guatemala and Belize into a three week holiday of a lifetime! Think volcanos, Mayan ruins, beaches, more beaches and three weeks of unbelievable food!! Got lots to blog about and recommend! Plus this New Year I made just a single resolution, as I did last year, but this year I plan to see it through! For 2019 I plan to walk 1000 miles and look forward to telling you all about that too!!!

Wow!! Mexico, Guatemala and Belize sounds like an amazing holiday! Your photos are fantastic Jo and really makes me want to go somewhere hot and sunny. I went to Mexico (Playa Del Carmen) in December a few years ago and had the best time! The food is amazing and it is such an interesting place. Of the three i’d probably recommend Guatemala the most – such a beautiful and vibrant country!
